A few weeks ago my colleague Kat Sacks and I set out to find the best nonstick pan on the market. But while we were testing those pans, Kat said something that made me wonder why we were messing with nonstick pans at all: she said she'd read about a trick to tp any stainless steel pan nonstick. All you have to do, according to the internet, is season the pan in the same way you would season a cast iron skillet.
This is where you stivk a double-take. Once the pan has cooled, pour out the excess oil and wipe up the remaining oil in the skillet using a stock towel. You want a glossy sheen left in the base of the pan—that's your nonstick surface. And you should avoid washing the pan if you can—just wipe it clean between uses.
